Chef Sam Harris’ Salami Waldorf Salad
This is a travel friendly version of a classic salad. This salad was originally served with mayonnaise based dressing but for this version we’ve lightened it up with an olive oil and lemon dressing and added some pork salami for protein and flavour. A great lunch to bring on an adventure that doesn’t require refrigeration.
Ingredients
- 4 stalks celery
- 2 celery roots
- 2 apples
- 100 ml raisons
- 60 slices dry cured salami
- 50 ml lemon
- 50 ml olive oil
- salt
- black pepper
Serves 4
Method
Step 1
rinse and juice your lemon then mix the juice, strained of seeds, with the olive oil to create a bright and simple dressing
Step 2
peel your celery root of dark outer layer with a knife and thinly slice the cleaned interior as thin as possible. Then julienne (cut into matchstick strips) your celery root, mix in raisins and toss with some salt, pepper and dressing. It should resemble coleslaw. divide amongst your 4 containers and pack it into the bottoms.
Step 3
cut your apple and celery into bite size pieces, toss with some salt, pepper and dressing and divide amongst your 4 containers.
Step 4
place salami slices on top and pack them up with some forks or chopsticks.
Variations
Add your favourite nuts or hard cheeses to customize for your family’s tastes.
